Recipe #47 | Double Chocolate Walnut Cookies

Making The Double Chocolate Walnut Cookies

My Husband loves cookies and for his 40th birthday I wanted to create a Paleo treat that he could enjoy on his special day…he really loved these! With the addition of Justin’s Hazelnut Butter these cookies taste amazing!

 

Ingredients:

Dry Ingredients:
3 Cup Almond Meal
1.5 Cup Shredded Coconut
1/2 Cup Flaxseed Meal
1.5 tsp Baking Soda
1 tsp Sea Salt

Wet Ingredients:
1/4 Cup Ghee
1/4 Cup Coconut Oil
1/4 Cup Almond Milk
3 Eggs
1 tsp Vanilla
2 Tbsp Chocolate Hazelnut Butter (Justins Brand)
1/2 Cup Coconut Sugar

Last Ingredients;
1 Cup Dark Chocolate Chips
1 Cup Walnut Pieces

 

Process:

1. Preheat Oven to 350F
2. Measure out Chocolate Chips and Walnuts and put aside
3. Combine all the Dry Ingredients set aside
4. Melt Coconut Oil with Butter Ghee
5. In large mixing bowl add all wet ingredients and whisk until fully combined
6. Add the dry ingredients and combine, you will need to swap the whisk for a wooden spoon
7. Add the Chocolate Chips and Walnuts and mix again
8. Evenly distribute the batter onto a baking sheet lined with parchment paper
9. Bake on center rack of oven for 25-30 minutes or until golden brown

Note: This recipe will make at least 32 cookies make them prior to going to the gym and share with your fellow Cross Fitters 🙂
